- 1 LB FISH - HADDOCK
- 1 CUP FLOUR
- 2 TABLESPOON BAKING POWDER
- 1 EGG - SEPARATED
- 1 TABLESPOON SALT
- 1/2 CUP LUKEWARM WATER
- 1 TABLESPOON MELTED SHORTENING - BUTTER
- OIL FOR FRYING

CUT FISH INTO SERVING PIECES. SIFT FLOUR, BAKING POWDER, AND SALT IN A BOWL. DROP EGG YOLK IN CENTER. ADD WATER AND MELTED SHORTENING AND MIX WELL. FOLD IN BEATEN EGG WHITE. DRY FISH PIECES AND DIP INTO BATTER. HEAT OIL - FRY FOR 4 TO 6 MINS OR UNTIL GOLDEN BROWN. DRAIN ON PAPER TOWELS.
