Coconut Pound Cake
ingredients
Cake- 4 eggs
- 2 c sugar
- 1 c oil
- 2 tsp coconut extract
- 3 c flour
- 1/2 tsp soda
- 1/2 tsp baking powder
- 1/2 tsp salt
- 1 c buttermilk
- 1 c coconut
- 1 c pecans, chopped (optional)
- 1 c sugar
- 1/2 c water
- 2 Tbsp butter
- 1 tsp coconut extract
directions
Cake
Beat eggs. Add sugar, oil, and coconut extract. Mix dry ingredients together and alternate flour mixture with buttermilk. Fold in coconut and nuts. Spoon into greased & floured bundt pan. Bake at 325° for 1 1/2 hours.
Glaze
Boil sugar, water, and butter for 5 minutes. Remove from heat and add coconut extract. Pour hot syrup over warm cake. Stand 4 hours before removing from pan.
