Mom's Cheesecake

ingredients
- 1 1/2 C graham cracker crumbs
- 3 T butter
- 3 T sugar
- 1 lb cream cheese
- 1/2 C sugar
- 1 tsp cinnamon
- 1/2 tsp vanilla
- 1 tsp grated lemon rind
- 1 T lemon juice
- 2 eggs, separated
- 1 C thick sour cream
- 1 T sugar
- 1 tsp vanilla

Blend graham cracker crumbs with butter and 2 T sugar. Press onto bottom of 9" spring pan. Bake in slow (300°) oven for 5 minutes. Cool.

Blend cream cheese softened at room temperature with 1/2 C sugar, cinnamon, 1/2 tsp vanilla, lemon rind, and lemon juice.

Add egg yolks, one at a time, mixing well after each yolk is added. Fold in stiffly beaten egg whites.

Pour the mixture on top of the crumbs. Bake in a slow (300°) oven for 45 minutes.

Blend sour cream with 1 T sugar and 1 tsp vanilla. Spread over top of cake. Return to oven for an additional 10 minutes. Cool.
notes
For best results make 1 1/2 times the recipe.
