Potato Fritters
ingredients
- 1 1/2 lbs of Russet Potatos, cut into small pieces and cooked until tender
- 2 egg yolks
- 4 T Cilantro, chopped
- 1 Bunch Green Onions, thinly sliced
- 3 T Green Pepper
- Jalapeno, minced (to taste)
- 1 C Jack or Cheddar cheese, grated
- Pinch Salt
- 1 C Panko Bread Crumbs
- 4 T Oil
directions
Put cooked potatos into a large bowl and break, up with a fork. Add the egg, cilantro, green onion, pepper and cheese. Season with salt and shape into patties. Dredge them in bread crumbs and press the crumbs into the patties on both sides. Heat the oil in skillet until hot and cook the patties over medium-high heat, until browned on both sides.
