Double Chocolate Cookies

- 12 ounces bittersweet chocolate, cut into larger than chip size chunks
- 1 stick (4 ounces) unsalted butter
- 4 ounces unsweetened chocolate, coarsely chopped
- 4 large eggs, at room temperature
- 1 1/2 cups sugar
- 1 1/2 tablespoons instant coffee powder
- 2 teaspoons pure vanilla extract
