"Fried" Chicken Nuggets

This is a low calorie version of a favorite crispy chicken.

ingredients

  • 1 pound boneless, skinless chicken breasts
  • 1 cup italian seasoned bread crumbs
  • 1/2 cup milk
  • cooking spray

directions

Preheat oven to 400 degrees. After trimming, cut chicken into chunks. Dip chunks into milk, then roll in bread crumbs. Layer on cookie sheet sprayed with cooking spray. Cook for 25-30 minutes until chicken is well done, or lightly brown.

I always serve this chicken with roasted potatoes and a green veggie.
