Caytie loves corn and who wouldn’t if it had butter, sugar and cream. A wonderfully creamy corn dish to serve at any meal.

ingredients

  • 2 cans creamed corn
  • 1 small bag frozen kernel corn
  • 1/2 stick butter
  • 1/2 tsp. kosher salt
  • 1/2 tsp. black pepper
  • 1/2 C. grated Parmesan cheese
  • 1 C. half and half
  • 1/4 C. sugar
  • 1/2 C. water
  • 1 Tbsp. corn starch

directions

In a large saucepan, place frozen corn, sugar, butter and creamed corn. Heat till corn is thawed. Slowly add the half and half. DO NOT BOIL. Simmer. Add salt and pepper. Add cheese and stir till smooth. To thicken: Mix water and corn starch in separate bowl till smooth. Slowly add to the corn mixture and stir till thick If it gets too thick just add more half and half till it is to the right consistency. Serve warm with some extra grated Parmesan on top.

notes

The real secret to this recipe is the Parmesan cheese. Do not skimp and use that junk in the can. Splurge and use the real stuff that you grate yourself.
