Chicken Breast Wrapped in Prosciutto
Savory Chicken Breast wrapped in thin slices of prosciutto
ingredients
- 1.5lb Boneless Chicken Breast
- 1lb Chicken Drummetts
- 5 Thin Slices of Prosciuto
- Fresh Sage Leaves
- 4 Cups of Broccoli
- 2 Cups Chickent Stock
- 3/4 Cup of Olive Oil
- 3 Cups of Chicken Stock
- 1 Cup of White Wine
- 5 Cloves of Garlic
- Cheese Cloth
- Salt and Pepper to Taste

Add 2 tablespoons of olive oil to a non-stick frying pan. Take 1lb of drummets and add to hot oil. Fry until lightly golden brown on each side. Once gold brown remove drummets and remove excess oil from pan. Add 1 cup of white wine to frying pan and allow de-glazing pan. Add drummets back to pan, add chicken stock, 2 sage leaves, salt and pepper to taste. Cook on low until reduced. Strain using cheese cloth and set aside.

Add 3 tablespoons of olive oil to a non-stick frying pan. Add boneless Chicken Breast and brown on each side. While the chicken is browning take the prosciutto and lay flat, add 4 sage leaves to prosciutto. Take browned Chicken breast and lay on prosciutto. Wrap the prosciutto around each chicken breast. Put each chicken breast back in pan and add to a preheated oven at 350 degrees. Let bake for 20 Minutes.

For the broccoli, add cloves of garlic to a preheat frying pan. Once hot add fresh broccoli and stir fry for 3 minutes. Once complete drain and let broccoli steam dry.

Remove Chicken from oven and slice in quarters. Add broccoli alongside sliced chicken. Add sauce from drummets and serve.
