Casserole Potatoes
My personal favorite baked style mashed potatoes.
ingredients
- 10 medium potatoes, peeled, salted to taste
- 8 oz. Cream cheese, softened
- 2/3 c. sour cream
- 1/2 c. minced green onion
- 8 slices bacon, fried crisp, crumbled
- 2 Tblsp. Butter, melted
- 2 Tblsp. Chopped parsley
- Salt & Pepper to taste

1. Cook potatoes in salted water, until tender, drain: shake over low heat until dry.

2. Preheat oven to 375°.

3. Blend cream cheese and sour cream in bowl. Add potatoes 1 at a time, mix with beater until smooth after each addition.

4. Add green onions, bacon, salt and pepper to taste.

5. Spoon into buttered 3 qt. Baking dish.

6. Drizzle with butter.

7. Bake at 375° for 20 – 25 minutes until golden brown.

8. Top with parsley
