Peanut Butter Fingers

ingredients

  • 1/2 cup soft shortening
  • 1/2 cup peanut butter
  • 1/2 cup sugar
  • 1/2 cup brown sugar, packed
  • 1 egg
  • 1 1/4 cups flour
  • 1/2 tsp baking powder
  • 3/4 tsp baking soda
  • 1/4 tsp salt
  • 4 small plain chocolate bars, melted
  • 3/4 cup salted peanuts, crushed

    Mix shortening, peanut butter, sugars and eggs thoroughly. Blend dry ingredients; stir in. Chill 1 hour.

    Heat oven to 375°. Using cookie press with star shaped plate, make cookies 2 1/2“ long. Place on greased baking sheet 2” apart. Bake 8 to 10 minutes.

    When cool, dip one end in melted chocolate and then in crushed peanuts.

notes

To ensure perfect pressed cookies: have baking sheet room temperature before forcing cookie dough through press onto it. If sheet is warm, the fat in the dough will melt and the cookies will pull away from the sheet when the press is lifted.
