Barbara's Chicken Casserole
Wonderful chicken casserole my mom has made for as long as I can remember. Make sure you double the recipe because it will disappear faster than you think!
ingredients
- 1 Frying Chicken
- 1 Cup Chopped Celery
- 2 Tsp. Chopped Onion
- 1/2 Cup Slivered Almonds
- 1 1/2 Cups Cooked White Rice (or more)
- 1/2 Tsp. Salt
- 1/4 Tsp. Pepper
- 1 Tbsp. Lemon juice
- 3/4 Cup Mayonnaise
- 1/4 Cup Chicken Broth (saved from chicken)
- 3 Hard Boiled Eggs (chopped)
- 1 Can Cream of Chicken Soup

In large saucepan, put one whole frying chicken in cold water, add salt, and boil for 15 minutes. Take off heat right away, and set aside for 25 minutes. Take out of water and cool. Cup up the chicken and save the broth.

Mix all ingredients and pour in casserole dish. Bake at 350 for 30 minutes.

Hint: To speed things up a little bit, I sometimes use an already cooked fryer chicken from Costco, and use canned or boxed chicken broth.
