Randy's Apple Crumble Pie
ingredients
- Topping:
- 1 1/2 c flour
- 1 1/2 c quick cooking oats
- 1 1/4 c packed brown sugar
- 3/4 c unsalted butter, melted
- 1/2 t salt
- Filling:
- 1 1/2 c sugar
- 2 T plus 2 t corn starch
- 1 t cinnamon
- 1 vanilla bean, split lengthwise
- 5 lbs Granny Smith apples, peeled, cored and cut into 1/2 inch slices
- 1/4 c unsalted butter, melted
- 4 t lemon juice
- 2 9 inch pie crusts

~ To make topping, mix all ingredients in a bowl until it resembles a coarse meal. Place in ziplock bag and chill

~ For the pie, mix together sugar, cornstarch and cinnamon in a bowl. Scrape in seeds from vanilla bean and let sit.

~ Preheat oven to 400

~ Place apples in a big bowl and add sugar mixture, then butter and lemon juice. Toss with hands

~ To assemble pies, place pie crusts on a cookie sheet and evenly divide apple mixture among 2 pie shells. Sprinkle top with crumble mixture.

~ Bake 15 minutes at 400 degrees. Reduce heat to 375 and bake 1 1/2 hour until bubbling
