Somtam Esan - Hot and Spicy Green Papaya Salad
From my Thai cooking class....
ingredients
- 1 medium size green papaya
- 4 cloves garlic
- 4 or more small red and green Thai chili peppers (“prik khee noo”)
- grape/cherry tomatoes, crushed
- fish sauce
- lime juice
- 1 tablespoon palm or brown sugar
- string beans or green beans, cut up
- unsalted roasted peanuts
- pounded dried shrimp
directions
Shred or grate papaya. Mix fish sauce, lime juice and sugar in small bowl. Crush garlic and chili peppers until chunky. (My teacher put them into a zip lock and rolled over them with a rolling pin.) Mix the papaya and the other ingredients to combine.

You can find green papaya in Thai or Asian groceries.
