Creamy Pumpkin Mousse
This dessert is suitable for diabetics. And tasty too!
ingredients
- 1 16 oz.-can solid-pack pure pumpkin
- 1 package (6-serving size) instant vanilla pudding mix
- 1/4 cup milk
- 1 tsp ground cinnamon
- 16 oz container whipped topping, thawed

In a medium bowl, with an electric beater on medium speed, beat the pumpkin, milk and cinnamon until well blended.

Fold in the whipped topping until thoroughly blended.

Spoon into serving bowls. Cover loosely and chill until ready to serve.

To make low in sugar and fat: use sugar-free pudding (1 1/2 boxes), low-fat milk and light whipped topping.
