Cream Cheese, Cranberry & Rosemary Stuffed Chicken

- 4 oz boneless, skinless, lean chicken breast
- 1 oz light cream cheese
- 1/16 cup dried cranberries
- fresh rosemary

Trim any excess fat off of the chicken. Cut through the middle of the chicken so that you create a pocket.

Next, mix the cream cheese, dried cranberries and rosemary leaves to taste.

Stuff the mixture into the center of the chicken. Top the chicken with a pinch of salt, pepper and fresh rosemary.

Bake at 400 degrees for 30 minutes, flipping half way through.
