Sugar Topped Molasses Spice Cookies
ingredients
- 2/3 c flour
- 2 t baking soda
- 1/2 t salt
- 2 t ground ginger
- 1/2 t cinnamon
- 1/4 t allspice
- pinch of black pepper
- 1 1/2 sticks unsalted butter, room temp
- 1 c packed light brown sugar
- 1/2 c molasses (not blackstrap)
- 1 egg
- 1/2 c sugar

~ Whisk together all dry ingredients in a bowl

~ In a separate bowl, beat butter until smooth and creamy. Add brown sugar and molasses and beat 2 minutes. Add egg and beat one more minute.

~ Reduce speed and add all dry ingredients and mix until combined - don’t overmix.

~ Divide dough in half and wrap in plastic and chill for at least 1 hour. (Can be made up to 4 days prior at this point)

~ Preheat oven to 350 and line 2 cookie sheets with parchment paper or a Silpat

~ Put 1/2 c sugar in a small bowl
- 7
~ Break off pieces of the dough, roll into a ball, then roll into the sugar. Place on the cookie sheet. Dip the bottom part of a glass into the sugar and press down on the cookies to flatten slightly.

~ Bake 12-14 minutes
