FARFALLE WITH SALMON, MINT AND PEAS
This is one of Brian’s favorites!
ingredients
- · 3/4 of a 1-pound box farfalle (bow ties) or pasta of choice
- · 1 pound skinless salmon fillet
- · 2 lemons, juiced and zested
- · 3 or 4 handfuls frozen peas
- · 1/4 cup chopped fresh mint or herb of choice
- · 2 tablespoons butter
- · Salt and pepper

Put water on to boil for pasta.

Season salmon with salt and pepper.

If salmon has a bottom skin, don’t worry. It separates easily from the meat when cooked.) Place in a roomy skillet with 1/4 cup water, lemon juice and zest. Bring to a simmer, lower heat and gently steam for 10 minutes.

Toss peas into skillet, bring to simmer again, cover and cook for 3 to 4 minutes.

When pasta is done, drain and return to pot. Add salmon and juices from the skillet to the pasta, flaking salmon into bite-size pieces.

Add butter and mint. Season with salt and pepper. Stir well.
