Chili Upside Down Pie
This is my version of Mom’s recipe. Mom uses kidney beans rather than black beans, and chili powder instead of taco seasoning.
ingredients
- 1 lb. ground beef
- 1/3 c. chopped onion
- 1 303-size can black beans or kidney beans, drained & rinsed
- 1 pkg. taco seasoning
- 1 303 size can diced tomatoes w/ juice
- Salt & pepper
- 1 box Jiffy cornbread mix

Brown meat and onions. Drain off fat and add seasonings, beans and tomatoes. Simmer for about 15 minutes until all heated through. Pam spray a casserole pan at least 2 1/2 to 3” deep by 9”. Preheat oven to 425 degrees.

Mix cornbread according to directions. Pour hot meat mixture into the casserole. Spread cornbread mixture evenly over the top almost to the edges.

Bake about 20 minutes until golden brown and bubbling.

Can make all but the cornbread the day before.
