Not Your Average Pizza Night
The most unexpected blessing of Graduate Student Housing has been the “Family Dinners” that spontaneously occur. This meal will easily serve four and is a fresh, homemade change for a Pizza and Game Night with neighbors.
ingredients
- 1 whole wheat refrigerated pizza crust
- 1 can re-fried beans
- 1 lb lean ground beef (seasoned with 1 package of Taco Seasoning)
- 1 package Mexican Cheese (or whatever is cheap)
- Assorted “Taco” Toppings: Lettuce, Tomatoes, Salsa, Avocado, Sour Cream

Prepare pizza crust according to package instructions. Bake crust for half the required baking time. Meanwhile, brown ground beef in a medium-sized skilled, drain grease, then season. Remove crust from oven; begin topping the pizza with a layer of re-fried beans, layer of seasoned beef and half the cheese. Return to oven for remaining bake time.

When “pizza” is finished, dress like a taco, but serve like pizza!

Serve with chips and salsa or chips and guacamole. For fun a fun treat, make an icy, fruity margarita-esque type beverage using frozen fruit and juice or Sprite!
