Not Your Average Pizza Night

Becky GoertemoellerBecky Goertemoeller

The most unexpected blessing of Graduate Student Housing has been the “Family Dinners” that spontaneously occur. This meal will easily serve four and is a fresh, homemade change for a Pizza and Game Night with neighbors.

ingredients

  • 1 whole wheat refrigerated pizza crust
  • 1 can re-fried beans
  • 1 lb lean ground beef (seasoned with 1 package of Taco Seasoning)
  • 1 package Mexican Cheese (or whatever is cheap)
  • Assorted “Taco” Toppings: Lettuce, Tomatoes, Salsa, Avocado, Sour Cream

directions

  • 1

Prepare pizza crust according to package instructions. Bake crust for half the required baking time. Meanwhile, brown ground beef in a medium-sized skilled, drain grease, then season. Remove crust from oven; begin topping the pizza with a layer of re-fried beans, layer of seasoned beef and half the cheese. Return to oven for remaining bake time.

When “pizza” is finished, dress like a taco, but serve like pizza!

  • 3

Serve with chips and salsa or chips and guacamole. For fun a fun treat, make an icy, fruity margarita-esque type beverage using frozen fruit and juice or Sprite!
