Gazpacho with Crumbled Feta Cheese
Eat this every summer, and you’ll live forever.
ingredients
- 2 pounds tomatoes, peeled, seeded, and chopped
- 2 cups good tomato juice
- 2 tablespoons extra-virgin olive oil
- 1 cup seeded, peeled and finely diced cucumber
- 1 cup finely diced yellow bell pepper
- 1/4 cup finely diced red onion
- 2-3 tablespoons chopped mixed fresh herbs
- 1 jalapeno, ribs removed, seeded and finely chopped
- 1 large garlic clove, minced
- 2 teaspoons ground cumin
- 1 tablespoon balsamic vinegar
- Fresh lemon or lime juice to taste
- Kosher salt and freshly ground pepper to taste
- 1/2 cup crumbled feta cheese, for serving

In blender, combine the tomatoes with the tomato juice and olive oil and puree. Transfer to bowl and add remaining ingredients, except feta. Refrigerate until cold.

Serve garnished with the cheese.
notes
This is really good if you get good tomato juice.
