Stuffed French Toast

  • ⅔ 8oz pkg fat free cream cheese

  • 2 tbsp & ½ cup strawberry spreadable fruit

  • 8 2" slices French bread

  • 2 egg whites

  • 1 egg

  • ¾ cup milk

  • ½ tsp vanilla

  • ⅛ tsp apple pie spice

  • Spray griddle and heat to medium.

  • Combine cream cheese and 2 tbsp fruit spread.

  • Using serrated knife, cut each slice of bread horizontally almost completely in half, forming a pocket.

  • Fill pockets with cream cheese & fruit mixture.

  • Combine egg whites, egg, milk, vanilla and apple spice.

  • Dip stuffed bread slices into egg mixture, coating both sides.

  • Place on griddle and cook each side 3 mins or until golden brown.

  • In small saucepan, heat ½ cup fruit spread, stirring frequently.

  • Pour over French Toast. Serve warm.
