Stuffed French Toast

ingredients
- 8 oz pkg fat-free cream cheese, softened
- 2 Tbsp strawberry spreadable fruit
- 8 - 2" slices French bread
- 2 eggs
- 3/4 cup milk
- 1/2 tsp vanilla
- 1/8 tsp apple pie spice (optional)
- 1/2 cup strawberry spreadable fruit

Spray griddle and heat to medium.

Combine cream cheese and fruit spread.

Using serrated knife, cut each slice of bread horizontally almost completely in half, forming a pocket.

Fill pockets with cream cheese mixture.

Combine eggs, milk, vanilla and apple spice, if using.

Dip stuffed bread slices into egg mixture, coating both sides.

Place on griddle and cook each side 3 mins, or until golden brown.

In small saucepan, heat remaining fruit spread, stirring frequently.

Spoon over French Toast and serve warm.
