Chocolate Zucchini Bread

ingredients

  • 1/2 cup butter, softened
  • 1/2 cup oil
  • 1 3/4 cups sugar
  • 1 teaspoon vanilla
  • 1/2 cup buttermilk or milk
  • 2 eggs
  • 2 1/2 cups flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon ground cloves
  • 4 tablespoons cocoa
  • 2 cups shredded zucchini
  • 1/2 cup chocolate chips, optional

directions

Preheat oven to 325°F. Cream together; butter, oil, sugar, vanilla, milk, and eggs. Add flour, baking soda, and cinnamon, cloves, salt and cocoa; mix well. Fold in zucchini. Put batter into 2 greased and floured loaf pans. Sprinkle with chips, if desired, before baking. Bake for about 1 hour or until toothpick inserted near center of cake comes out clean.
