Vegetarian Chili

A hearty chili with no meat (though you could certainly add it if so desired).

ingredients

  • 1 1/2 Cups chopped onions
  • 3-4 Cloves minced garlic
  • 1 Jalapeno, finely chopped
  • 2 Cups chopped green and red bell peppers
  • 2 Tablespoons olive oil
  • 4 14 1/2 oz. cans diced tomatoes
  • 3 15 oz. cans red kidney beans, rinsed and drained
  • 1 15 oz. can black beans, rinsed and drained
  • 1 15 oz. can great northern beans, rinsed and drained
  • 1 12 oz. can beer
  • 2 Tablespoons chili powder
  • 1 Bay leaf
  • 1 1/2 Teaspoons dried basil
  • 1 1/2 Teaspoons dried oregano
  • 1 1/2 Teaspoon cumin
  • 1-2 Teaspoons sugar
  • Salt and pepper
  • Hot sauce to taste

directions

    In a large pot, sauté onions, garlic, jalapeno, and peppers until soft.

    Add in remaining ingredients (do not drain the tomatoes).

  • 3

    Bring to a boil and then lower heat.

  • 4

    Simmer for an hour.

  • 5

    Remove bay leaf before serving.
