Vegetarian Chili
A hearty chili with no meat (though you could certainly add it if so desired).
ingredients
- 1 1/2 Cups chopped onions
- 3-4 Cloves minced garlic
- 1 Jalapeno, finely chopped
- 2 Cups chopped green and red bell peppers
- 2 Tablespoons olive oil
- 4 14 1/2 oz. cans diced tomatoes
- 3 15 oz. cans red kidney beans, rinsed and drained
- 1 15 oz. can black beans, rinsed and drained
- 1 15 oz. can great northern beans, rinsed and drained
- 1 12 oz. can beer
- 2 Tablespoons chili powder
- 1 Bay leaf
- 1 1/2 Teaspoons dried basil
- 1 1/2 Teaspoons dried oregano
- 1 1/2 Teaspoon cumin
- 1-2 Teaspoons sugar
- Salt and pepper
- Hot sauce to taste

In a large pot, sauté onions, garlic, jalapeno, and peppers until soft.

Add in remaining ingredients (do not drain the tomatoes).

Bring to a boil and then lower heat.

Simmer for an hour.

Remove bay leaf before serving.
