Vegetable Salad

Each seving provides: 1/2 Bread Exchange 1/2 Vegetable Exchange 1 Fat Exchange 5 Optional Calories

ingredients

  • 1/2 cup diced carrots, blanched and chilled
  • 1/2 cup broccoli florets, blanched and chilled
  • 3 ox diced pooked potato, chilled
  • 1/2 cup frozen peas, cooked and chilled
  • 2 tbsps minced red onion
  • 1/4 cup WW reduced calorie whipped salad dressing
  • 2 tsp pickle relish
  • 2 tsp red wine vinegar
  • Dash white pepper

    In meduim mixing bowl combine carrots, boccoli, potato, peas, and onion; set aside. In small mixing bowl combine remainng ingredients, stirring until blended; add to vegetable mixture and stir to coat.

    Chicken-Vegetable Salad-

  • 4

    Add 1/4 lb cubed cooked chicken to vegetable mixture. Proceed as recipe directs. Add 1 protein Exchange to Exchange information.
