Great to make with fresh picked apples. Freezes beautifully too!
4 eggs
1½ cups sugar
½ cup buttermilk or reg. milk
½ cup mayonnaise or plain yogurt
2 teaspoon vanilla extract
2½ cups all-purpose flour
1 teaspoon baking powder
2 teaspoon ground cinnamon
½ teaspoon baking soda
¼ teaspoon salt
2-3 medium apples, peeled and chopped
1 cup raisins (opt)
1 cup chopped walnuts
In a mixing bowl, combine the eggs, sugar, buttermilk, mayonnaise and vanilla. Combine the flour, baking powder, cinnamon, baking soda and salt; add to egg mixture and beat just until combined. Fold in apples, raisins and walnuts. Spoon into two greased 8-in. x 4-in. x 2-in. loaf pans.
Bake at 375 degrees F for 1 hour or until a toothpick inserted near the center comes out clean. Cool for 10 minutes before removing from pans to wire racks to cool completely.

We went to an apple orchard one autumn in Sweden. The kids and I picked over 60 pounds of apples with Auntie Anna, (a.k.a. Auntie Fika)Melina and Victor. We had a GREAT time and I made quite a few loaves of this bread!
