Shrimp and Crawfish Etouffe
ingredients
- 1 lb peeled crawfish tails
- 1 lb peeled and deveined shrimp
- 1 stick butter
- 1 cup chopped onion
- 1/4 cup green onion chopped
- 1 cup chopped celery
- 1/4 cup chopped parsley
- 1 cup chopped bell pepper
- 1-2 tbsp tomato paste
- 3 tbsp flour
- 1 can chicken broth
- 1 pod chopped garlic
- salt, pepper and cayenne pepper to taste.

Melt butter in heavy pan, add onion, celery and bell pepper and saute well. Add flour and tomato paste and stir often until mixed well.

Add seasonings, garlic and broth. Simmer for 30 minutes. Add crawfish tails and shrimp. Simmer for another 30 minutes.

Just before serving, add chopped onion and parsley. Serve over steamed rice.
