Hot Pastrami Sandwiches for Company
You can make these with cocktail rye for an easy appetizer
ingredients
- 2 lbs thinly sliced peppered pastrami
- 2 lbs thinly sliced corned beef
- 1 can of beer
- 1 T caraway seeds
- 1 can beef broth
- Optional:
- 1 onion, sliced into rings
- 1 T oil
- salt and pepper
- 16 slices rye bread
- 8 slices swiss cheese
- 1/2 cup whole grain good quality mustard
- 3 cups cole slaw (can be purchased)

Place pastrami, corned beef, and broth into a crock pot. Heat, covered, on lowest setting, until hot, at least 1 hour and up to 3 hours.

Saute onion rings in oil until very soft, sprinkle with salt and pepper to taste.

Set out bread slices and cheese on a platter, onions, mustard and cole slaw in small bowls. Cover with plastic wrap until served.

When pastrami mixture is hot and onions are cooked, invite guests to make their own sandwiches. Cut sandwiches in half to make them more manageable, or use cocktail rye bread instead to make them finger food or little buns instead. If you want to make these in smaller batches, you could toast the bread, or, if you have a grill, you could toast the bread on the grill for a larger group.
