Balsamic Pepper Chicken
This an easy and attractive dish to make for company. No one has to know how simple it is to pull together.
4 large bell peppers in red, orange, yellow and green- cored and sliced
1 large sweet or red onion, sliced thin
½ cup organic balsamic vinegar
¼ cup gluten-free Worcestershire Sauce
¼ cup extra virgin olive oil
1 cup chicken broth
6 fresh cloves of garlic, chopped
1 tablespoon dried basil
1 teaspoon rosemary
1 teaspoon thyme
4 fresh organic free-range split breasts of chicken, rinsed and patted dry
Sea salt and ground pepper, to taste
