Turkey Broccoli Roll-ups
ingredients
- 2 cups enriched rice, cooked
- 1/3 cup shredded carrots
- 1 4oz. Can of mushrooms, drained
- 2 T. green onion slices
- 1 10 oz. pkg. frozen or fresh broccoli cooked (I like fresh)
- 4 slices American cheese, cut in half diagonally.
- 1/2 lb. Skinned boneless cooked turkey slices, sliced thick
directions
If using fresh broccoli, cook broccoli al dente. Otherwise, combine rice, carrots, mushrooms, broccoli, and onions. Mix lightly. Pour rice mixture into 10 x 6 inch baking dish. Wrap turkey slices around broccoli spears forming 4 rolls. Place on rice mixture. Cover, Bake at 350 degrees for 20-25 minutes or until thoroughly heated. Top each roll with one slice of cheese, continue baking until cheese melts.
