Captain Morgan's Caribbean Chili
If you want to make an unusual chili this is the recipe for you. A combination of beans, chicken, lime and lime zest, corn and a spicy kick have taken a prize at a chili contest... so go ahead and give it a try!
ingredients
- two pounds raw chicken breast, cubed
- 4 tablespoons olive oil
- 3 cans white beans plus liquid
- 3 cans black beans plus liquid
- 1 (10 oz.) bag frozen corn
- 1 large white onion, rough chopped
- 4 smoked ham shanks
- 3 tablespoons beef bouillon
- 2 large cans of diced tomatoes
- 1 1/2 tablespoons chili powder
- 1 teaspoon hot chipotle paste
- 1/2 cup Captain Morgan’s spiced rum
- 1/3 cup sugar
- juice of two limes
- zest from two limes
- 1 1/2 teaspoons coriander
- 1 1/2 teaspoons paprika
- 1-2 teaspoons Caribbean jerk seasoning
- cilantro, sour cream, cheese for garnishing

In a large soup pot add the olive oil.

Add chicken and saute until cooked through the middle.

Add all the other ingredients and cook for about 1 1/2 hours.

Garnish with cilantro, sour cream and cheddar cheese.
