Captain Morgan's Caribbean Chili

If you want to make an unusual chili this is the recipe for you. A combination of beans, chicken, lime and lime zest, corn and a spicy kick have taken a prize at a chili contest... so go ahead and give it a try!

ingredients

  • two pounds raw chicken breast, cubed
  • 4 tablespoons olive oil
  • 3 cans white beans plus liquid
  • 3 cans black beans plus liquid
  • 1 (10 oz.) bag frozen corn
  • 1 large white onion, rough chopped
  • 4 smoked ham shanks
  • 3 tablespoons beef bouillon
  • 2 large cans of diced tomatoes
  • 1 1/2 tablespoons chili powder
  • 1 teaspoon hot chipotle paste
  • 1/2 cup Captain Morgan’s spiced rum
  • 1/3 cup sugar
  • juice of two limes
  • zest from two limes
  • 1 1/2 teaspoons coriander
  • 1 1/2 teaspoons paprika
  • 1-2 teaspoons Caribbean jerk seasoning
  • cilantro, sour cream, cheese for garnishing

directions

    In a large soup pot add the olive oil.

    Add chicken and saute until cooked through the middle.

  • 3

    Add all the other ingredients and cook for about 1 1/2 hours.

  • 4

    Garnish with cilantro, sour cream and cheddar cheese.
