Lemon Thyme Chicken
Michelle’s favorite chicken!
ingredients
- 1/4 cup flour
- 1 tsp salt
- 1/4 tsp pepper
- 4 Tblsp olive oil, divided
- 1/2 medium onion, chopped
- 1 Tblsp margarine
- 1 cup chicken broth
- 3 Tblsp lemon juice
- 2 Tblsp parsley
- 1/2 tsp thyme
- 4-5 boneless, skinless chicken breasts

In large ziplock bag, mix flour, salt & pepper. Add chicken breast pieces and coat well. Save flour after removing chicken.

In electric skillet, over medium-high heat, warm 2 Tblsp olive oil. Add chicken and cook. Transfer chicken to plate.

Add remaining 2 Tblsp olive oil to skillet. Add margarine and chopped onion, cooking until soft and tender.

Stir in remaining flour mixture. Add broth, lemon juice, thyme and parsley. Stir well.

Add chicken and heat through.
