Gazpacho
I think that gazpacho is quite the refreshing soup option – especially in the summer. It goes well with a simple sandwich as well as something a little fancier and off the grill. Not only that, but it is actually pretty healthy for you as well – gazpacho is made up of all kinds of different veggies.
ingredients
- 1 Cup Chopped: red onion, green pepper, cucumber
- 1 Cup Chopped and seeded tomato
- 1 1/2 Teaspoon Garlic chopped
- 1 1/2 Teaspoon Kosher salt
- 1/4 Teaspoon Cayenne pepper
- 1/4 Cup Tomato paste
- 1 Tablespoon White wine vinegar
- 1/4 Cup Extra virgin olive oil
- 3 Cups Tomato juice
- 1 Sprig Thyme

1. Mix all ingredients in a bowl, cover and refrigerate (ideally overnight so that all of the flavors start to combine together).

2. The next day, blend until smooth and refrigerate until served.
