Toscano soup
ingredients
- 2 3/4 cups chicken stock or broth
- 1/4 cup heavy cream
- 1 medium russet potato
- 2 cups chopped kale
- 1/2 pound spicy Italian sausage
- 1/8 tsp. salt
- 1/4 tsp pepper

Combine broth and cream in large saucepan over medium heat.

Dice unpeeled potato into soup. Add kale. Grill or saute’ sausage. When cooked and cooled, cut into 1/2 in slices. Add to soup. Add salt and pepper. Let soup simmer about 2 hours. Stir occasionally.
