Asian Stir-fry Colossal Shrimp with Broccoli and Green Curry Sauce
Healthly and Yummy Shrimp with Broccoli
ingredients
Ingredients for Shrimp with Broccoli- 3 or 6 Colossal Shrimp or extra large fresh shrimp – tails removed
- 1 stalk fresh organic Broccoli
- 1 clove fresh garlic
- 1/2 cup fresh diced white or sweet onions
- 1/2 cup fresh sliced organic mushrooms (any kind you like or mix it up)
- 1/2 cup organic chicken broth (low salt)
- 1 tsp of Asian fish sauce
- 1 tsp of Walnut oil, Sesame oil or Coconut oil for stir frying
- Ground black pepper and sea salt to taste
- 1/2 can coconut milk – (purchase from Asian section of supermarket)
- 1/2 tablespoon of Green Curry Sauce – (purchase from importfoods.com)
- 1 teaspoon dark brown sugar (optional)
- 1 cup diced white onions
- 1/4 tsp Walnut, Coconut or Sesame oil (flavored oil works best, and is healthier)

Instructions for Preparing Shrimp and Veggies

De-shell and clean shrimp, remove tails.

Place raw shrimp in small glass bowl.

In small bowl with shrimp, add sprinkle of fresh ground sea salt and fresh ground black pepper.

Add just a touch or 1/4 teaspoon of fish sauce, mix all together in bowl.

Cover bowl with plastic wrap and put in the fridge for 15 minutes to marinate.

While Shrimp is marinating prepare fresh ingredients.

Cut up broccoli into large bite sized pieces, remove stalks.

Dice onions and garlic.

Slice mushrooms.

Put all fresh veggies into large bowl together, expect broccoli (keep broccoli separate). Set aside.

Prepare Green Curry Sauce.
Instructions for Green Curry Sauce:

Open can of coconut milk (shake can before opening to mix together), and set aside 1/4 to 1/2 can of coconut milk.

(Save remaining coconut milk for another day, put in plastic or glass container and fridge for up to 7 days).

In small quart-sized pan, add diced onions and just a touch of oil; heat to shimmering (a few seconds).

Add 1-2 teaspoons of green curry paste mix. Heat 1-2 minutes or until slightly brown and heated through. (Be careful not to cook too long or to burn).

Add Coconut milk and brown sugar and mix gently, bring to a slow boil.

Simmer until thick. (About 10 minutes). Stir every few minutes.

If you like it spicier, add a bit of hot pepper flakes or hot pepper sauce. Remove from heat and set aside.
Instructions to cook Shrimp with Broccoli

Remove marinated shrimp from fridge and set aside.

In large wok or large frying pan, add oil and garlic and heat until shimmering (a few seconds). Garlic should be just slightly brown.

Add onions and mushrooms; stir fry until fragrant and slightly soft.

Add marinated shrimp (with marinated juices from bowl). Be careful when adding cold ingredients to the hot pan, as it will splatter.

Add broccoli to hot pan.

Stir fry on high heat until shrimp are pink and broccoli is bright green but still a bit hard. (You might need to add a bit more oil if not using a wok).

Lower heat to medium and add chicken broth. Mix together for 1-2 minutes, then turn down heat to simmer for 5 minutes or until broccoli is tender. (Shorter cooking time if you like your broccoli still crunchy.)

Remove from heat.

Put Shrimp mixture on plate. (Without pan juices, see below)

Heat up the Green Curry sauce (previously made) for a few minutes.

Put Green Curry sauce in a small bowl on plate. (For dipping)
De-Glaze Pan Sauce

You will have a bit of left over watery sauce in bottom of the pan. Remove food ingredients and keep juices in hot pan.

Add 1/2 teaspoon of cornstarch to pan and mix with liquid ingredients on medium heat until desired thickness.

Pour sauce over shrimp mixture and mix together. (Optional)

Cooks Notes:
This meal is great on its own, or you can pair it with 1/2 cup steamed brown rice. Also, you can add more fresh veggies such as shredded carrots, Boy Choy, green beans, use your imagination!
The more veggies you use, the healthier the dish will be!
The green curry sauce tastes great with brown rice and gives it some flavor. Or for a more Asian kick, pour some of the green curry sauce on Cooked Soba Japanese Noodles or Cooked Thai Rice Noodles and mix together (instead of the rice).
Shopping tips:
I buy most of my Asian ingredients from the online websites below. If you can’t find the Green Curry mix from import foods, purchase the Green Curry sauce premade from Curry Simple. Omit the coconut milk when making the green curry sauce since Curry Simple mix already has the coconut milk added.
Also, you can purchase the Green Curry Sauce, Asian noodles and Fish Sauce from any Asian food market or Asian food section in most supermarkets.
I only use Virgin Organic Coconut Oil for my cooking. You can purchase Coconut or Sesame oil and Coconut Milk from Whole Foods or from Tropical Traditions. Walnut oil and canned Coconut milk can be purchased from any supermarket.
