Spicy Meatloaf - Individual Serving Size. Adapted from Tex-Mex Meatloaf for Two from Southern Living
ingredients
- 1 lb ground turkey (or beef)
- 1/4 C chopped onion
- 1/2 C oatmeal
- 4 oz can chopped green chiles OR 1/4 C roasted/seeded/peeled/chopped hatch green chiles
- 2 eggs
- Salt
- Pepper
- Cumin
- Garlic Powder
- Chili Powder
- Emeril’s Southwest Seasoning
- Salsa
- Grated Cheese - sharp cheddar, colby jack or mexican blend

Mix everything except salsa and cheese together in a bowl. Use seasonings to taste - easy on the cumin and garlic powder since they are pretty strong flavors. You can cut back on the green chiles if you want it less spicy. Form into 4-5 individual meatloafs (little footballs), and place in a glass baking dish coated with cooking spray. Bake at 375° for approx 25 min.

Remove from oven. Spoon salsa over the top of each meatloaf and top with grated cheese. Return to oven until cheese melts.
