Jalapeño Lime Hummus

Why buy packaged hummus when you make your own tasty version at home in no time flat? I jazz mine up with non-traditional lime, peanut butter and jalapeños for a Santa Fe twist.

  • 1 chilled 16-oz. can chickpeas or garbanzo beans, drained, rinsed

  • Juice of one large fresh lime

  • 2 tablespoons peanut butter or Sunbutter

  • 3 cloves fresh garlic

  • 2 heaping tablespoons pickled jalapeños

  • 2 tablespoons olive oil

  • 1 tablespoon minced fresh cilantro leaves

  • Pinch of curry or cumin, to taste

  • Red pepper flakes, to taste

  • Pinch of sea salt, to taste

notes:

Serve hummus as a side dish. This naturally gluten-free hummus is fab with a plate of roasted vegetables and brown rice. It's a lovely way to add a complementary protein to a vegan meal.
