Jalapeño Lime Hummus
Why buy packaged hummus when you make your own tasty version at home in no time flat? I jazz mine up with non-traditional lime, peanut butter and jalapeños for a Santa Fe twist.
ingredients
- 1 chilled 16-oz. can chickpeas or garbanzo beans, drained, rinsed
- Juice of one large fresh lime
- 2 tablespoons peanut butter or Sunbutter
- 3 cloves fresh garlic
- 2 heaping tablespoons pickled jalapeños
- 2 tablespoons olive oil
- 1 tablespoon minced fresh cilantro leaves
- Pinch of curry or cumin, to taste
- Red pepper flakes, to taste
- Pinch of sea salt, to taste

Serve hummus as a side dish. This naturally gluten-free hummus is fab with a plate of roasted vegetables and brown rice. It's a lovely way to add a complementary protein to a vegan meal.
