To Die For Blueberry Muffins
ingredients
Muffins:- 1 1/2 cups all purpose flour
- 3/4 cup granulated white sugar
- 1/2 teaspoon salt
- 2 teaspoons baking powder
- 1/3 cup vegetable oil
- 1 egg
- 1/3 cup milk
- 1 cup fresh or frozen blueberries
- 1/2 cup brown sugar
- 1/3 cup all purpose flour
- 1/4 butter, softened
- 1 1/2 teaspoons ground cinnamon

Muffins:

Preheat oven to 400 degrees. Spray a 12 cup muffin pan with cooking spray.

Combine flour, sugar, salt and baking powder in a large bowl.

Place vegetable oil into a one cup measuring cup; add the egg and enough milk to fill the cup.

Add the liquid mixture to the flour mixture and stir to combine. Fold in blueberries. Fill muffin cups right to the top and sprinkle with crumb topping.

Bake for 20 - 25 minutes or until tester inserted in centre comes out clean.
Crumb topping:
Mix sugar, flour, butter and cinnamon together with a fork and sprinkle over muffins before baking.
