Yogurt Cuccumber Dip
Creamy-garlicky yogurt with chopped cuccumbers and a hint of mint, make for a refreshing pita chip dip or drizzle over fish, chicken or beef!
ingredients
- 1 large container plain yogurt (can use goat milk yogurt too)
- 1 cup bicarbonated water
- 1 medium cuccumber, peeled and diced
- 1-2 garlic cloves minced
- 3tsp salt
- 2tsp crushed dry mint leaves
- 2tsp olive oil
- fresh mint leaves for garnish
directions
In medium bowl, mix yogurt with bicarbonated water until creamy consistency, not runny. Add cuccumbers, minced garlic, salt, crushed mint leaves and olive oil. Mix with spoon to blend. May need to add more salt to taste. Place in serving dish and top with sprig of fresh mint leaves.
