Roasted Vegetable Cheddar Quiche

What to do with a bowl of leftover roasted vegetables? Make a crust-less quiche. Forget the crust. You won’t miss it- trust me.

  • 2 cups roasted vegetables: broccoli, zucchini, onion, garlic, sweet potato

  • 4 oz. aged Cheddar cheese, grated

  • 4 extra large happy organic eggs, beaten

  • ½ cup light cream, Half & Half

  • A pinch of nutmeg and Old Bay Seasoning

  • 1 tablespoon chopped fresh basil or parsley
