- 1 t chili powder
- 2 t cider vinegar
- 1/2 t ground cinnamon
- 5-6 (4-6 ounce) lean center-cut pork chops (3/4-inch thick)
- 1 t vegetable oil
- 1 (16-ounce) package frozen whole-kernel corn, thawed
- ADD: 1 can drained black-eyed peas for New Year’s good luck
- 1 1/2 C chopped red bell pepper
- 1/2 C chopped green onions
- 2 T finely chopped pickled jalapeño pepper
- 4 t bottled minced garlic
- 1 t dried oregano
- 1 (14.5-ounce) can diced tomatoes, drained
- Parsley sprigs (optional)
