Hummus
A delicious Mediterranean dip. Perfect for a snack or appetizer.
ingredients
- 3/4 cup dried chickpeas
- Juice of 2 lemons
- 2 garlic cloves sliced
- 2 T. olive oil
- pinch of ground cayenne pepper
- 2/3 c. tahini
- salt and pepper

First, put the chickpeas in a bowl with plenty of cold water and let soak overnight. Drain and cover with fresh water in a saucepan. Bring to a boil and boil rapidly for 10 min. Reduce heat and simmer for 1 hour until soft. Drain.

Process the chickpeas and other ingredients in blender or food processor until creamy. Add more water to thin if needed.

To serve, drizzle with more oil and sprinkle with cayenne.
