CHICKEN AND WILD RICE SOUP

ingredients

  • 1 box Uncle Ben’s long grain and wild rice
  • 1/4 C butter
  • 1/2 C chopped celery
  • 1/2 C mushrooms
  • 1 medium onion, chopped
  • 1/2 C flour
  • 6 C chicken broth
  • 1/8 tsp. curry powder (or more)
  • 1 tsp. dry mustard
  • 1/2 tsp. black pepper
  • 2 C milk
  • 2 C chicken, cooked & cut up

directions

Prepare rice according to directions; set aside. Saute onion, celery and mushrooms in butter. Sprinkle in flour; blend well. Slowly add chicken broth, mixing well. Add seasonings and cooked rice. Stir in milk and cooked chicken. Simmer about 45 minutes.
