CHICKEN AND WILD RICE SOUP
ingredients
- 1 box Uncle Ben’s long grain and wild rice
- 1/4 C butter
- 1/2 C chopped celery
- 1/2 C mushrooms
- 1 medium onion, chopped
- 1/2 C flour
- 6 C chicken broth
- 1/8 tsp. curry powder (or more)
- 1 tsp. dry mustard
- 1/2 tsp. black pepper
- 2 C milk
- 2 C chicken, cooked & cut up
directions
Prepare rice according to directions; set aside. Saute onion, celery and mushrooms in butter. Sprinkle in flour; blend well. Slowly add chicken broth, mixing well. Add seasonings and cooked rice. Stir in milk and cooked chicken. Simmer about 45 minutes.
