Yin-Yang Super Charged Fantasy Salad
This salad is an exotic and beautiful presentation when layered in a clear trifle dish or any footed compote bowl. Nothing short of an explosion of flavors to your senses. Not only that, it is a power house of nutrition! Simply stated, it has it all... everything you could ever want in one bowl. Sweet, sour, salty, peppery, soft, crunchy, intense yet mild... you name it, it has all the elements! This salad is so flavorful you can’t even imagine it unless you try it for yourself.
ingredients
- Romaine lettuce, chopped
- 1/2 red bell pepper, julienned
- 1/2 yellow bell pepper, julienned
- 1/2 orange bell pepper, julienned
- 1 large red onion, sliced
- 1 cup mandarin orange sections, rained
- 1/2 cup green table onions, chopped
- 3/4 cup dried cranberries
- 2 cups cooked chicken, cubed
- 1 tablespoon chopped mint leaves
- 1/3 cup flaked coconut
- 1 tablespoon chopped cilantro leaves
- 3/4 cup sliced toffee almonds
- 1 bottle Wishbone Raspberry Vinaigrette with hazelnut dressing
- (this vinaigrette highly recommended)

In large trifle or regular bowl, add a generous bottom layer of romaine lettuce.

Add a layer of the red julienned pepper.

Add a layer of the yellow pepper.

Add a layer of the orange pepper.

Add a layer of the sliced red onion.

Add a layer of mandarin orange sections.

Add a layer of cubed chicken.

Add a layer of the chopped mint leaves

Add a layer of green table onions.

Add a layer of the dried cranberries.

Add a layer of sliced toffee almonds.

Pour on the salad some “Wishbone” Raspberry Vinaigrette

This salad is truly over the top! You can leave out the mint leaves and the cilantro if you wish... I love them!
