ingredients

  • 4 pkgs (10 oz each) frozen chopped spinach
  • 1/2 cup olive oil, or margarine
  • 4 onions, chopped
  • 2 bunches scallions, including 4 inches of green tops, finely chopped
  • 1/2 cup chopped fresh dill or 3 Tbsp. dried dill
  • 1/2 cup chopped parsley
  • 1 lb. feta cheese, crumbled
  • 1 lb. phyllo pastry

    Squeeze spinach as dry as possible and place in a colander so that remaining moisture will drip out. It’s important that spinach is dry.

    Heat 1/2 cup olive olie and saute the onions and scallions until soft. Add spinach, dill and parsley, and cook, stirring for 5 minutes. Remove from heat and stir in feta cheese Let cool.

    Cut, fill and fold phyllo pastry as in baked cheese puffs, except brush strips with olive oil.

    Place the triangles in a baking pan and brush with oil. Bake in preheated 350 ove until golden, about 20 minutes. Serve hot or let cool.
