Salmon Nicoise
Made this for Mama once and she just loved it
ingredients
- 1 1/3 lb. cooked salmon chilled
- Break into large chunks and set aside
- Place romaine or red leaf lettuce on platter. Put the salmon in the middle
- Place around the Salmon:
- 1 lb cooked asparagus or green beans
- 1 lb new potatoes cut into cubes
- 2 tomatoes cut into wedges
- 6 oz. jar of artichokes cut in half
- 1 can black olives
- Top with 2 tbsp. of parmesan cheese
- Top with Nicoise Dressing

3 tbsp. olive oil

1/2 tsp. Dijon mustard

2 pressed garlic cloves
- 5
3 tbsp. lemon jice
- 6
1/4 tsp basil
- 7
6 anchovies, drained, rinsed, and mashed
- 8
1 1/2 tsp. capers
