Frazier's Gourmet Chicken Salad
This recipe is from a favorite gourmet food shop in Fishers. We’d go have lunch for birthdays and also when Hayley was back in town visiting.
ingredients
- 8 chicken breast halves, w/o skin
- 4 celery stalks, chopped
- 1/2 C. English walnuts, chopped
- 1 C. white grapes or red seedless, sliced
- 1 1/4 C. Hellman’s light mayo
- Dash salt & pepper
- 1 bunch green onions, chopped
directions
Cook chicken breasts in COLD, salted water for 1/2 hr. Cube chicken while it is still warm- this makes the chicken salad creamy. Add remaining ingredients, mix, cool and serve.
notes
This is great served over greens and drizzled with balsamic vinaigrette.
