'Junk in the Trunk' Cheese Ball

ingredients
- 2 cups shredded swiss cheese
- 2 cups shredded cheddar cheese
- 1 8 oz pkg cream cheese (softened)
- 1/2 cup sour cream
- 1/2 cup chopped onion
- 1 2 oz jar of pimentos
- 2 tbl. sweet pickle relish
- 10 slices of bacon, cooked, drained, and crumbled
- 1/2 cup finely chopped pecans
- dash of salt
- dash of black pepper
- 1/2 cup chopped flat leaf parsley
- 1 tbl. poppy seeds
- Assorted crackers

Let swiss and cheddar come to room temp. In a large bowl, beat the cream cheese and sour cream until fluffy. Beat in the swiss, cheddar, onion, undrained pimentos, pickle relish, half of the bacon, and a 1/4 cup of the pecans and salt and pepper. Cover and chill until firm.

Turn out the mixture onto wax paper and shape into a large ball. In a small bowl, combine remaining bacon, pecans, parsley, and poppy seeds. Roll the cheese ball in the mixture to coat. Wrap and chill.

Let stand for 30 minutes at room temp before serving!
