Pasta Pronto
ingredients
- 16 oz. spaghetti
- 3 cups (about 3 large) diced fresh tomatoes or 3 1/2 cups (28 oz. can) whole tomatoes, drained and chopped
- 1 cup (4 oz.) cubed part-skim mozzarella cheese
- 1/4 cup chopped fresh basil leaves or 1 Tbsp. dried basil leaves
- 1/4 cup olive or vegetable oil
- 2 cloves garlic, minced
- Salt and pepper to taste
- Grated Parmesan cheese
directions
Cook pasta according to package directions. Meanwhile, on large serving platter or bowl, stir together remaining ingredients except Parmesan cheese. Add hot pasta to serving platter; toss with basil mixture until thoroughly combined. Sprinkle with Parmesan cheese; serve immediately.
