Dee's Mandarin Orange Cake
Sounds tropical and summery, but this cake recipe is best served anytime.
ingredients
- 1 18 oz white cake mix
- 2 eggs
- 1/3 c. applesauce
- 1 11 oz. can mandarin oranges, undrained
- 1 8 oz container Cool Whip, thawed
- 1 8 oz. can crushed pineapple, undrained
- 1 3.4 oz box instant vanilla pudding

In mixing bowl, combine cake mix, eggs, applesauce and oranges. Beat on low speed for 30 second; beat on medium speed for 2 minutes. Pour into two greased and floured 9-in round cake pans. Bake at 325 for 30 minutes or until fork test comes out clean. Cool in pan 10 minutes, remove pans and cool on wire rack until completely cool.

In medium mixing bowl, beat Cool Whip, pineapple and pudding mix on low speed. Spread between layers and over top and side of cake. Chill until served.
