Healthier Burritos
Chicken, Mushrooms, Black Beans & Brown Rice Burritos
ingredients
- 1 can black beans
- 8 oz sliced mushrooms
- 1 small onion
- 12 oz skinless boneless chicken breast (cut into thin strips)
- 1 bag instant brown rice
- lemon pepper
- garlic salt
- thyme
- worcestershire sauce
- non-stick olive oil spray
- 1 avocado
- shredded lettuce
- diced tomatoes
- shredded 2% cheddar cheese
- peach mango salsa
- 6 wheat tortillas or wraps

Cook bag of rice according to directions on box. When rice is ready, drain and set aside.

Dice the onion finely and slice the mushrooms. Dice avocados and tomatoes. Shred lettuce and cheese.

Season chicken with garlic salt and lemon pepper. Spray a pan with the non-stick olive oil spray and saute the chicken strips. When ready, remove from pan and set aside to cool.

Using the same pan, spray with olive oil and saute the onions til translucent. Add mushrooms, thyme, lemon pepper, garlic salt and worcestershire sauce. Cook mushrooms till juices are absorbed. Add can of black beans, rice and chicken. Stir til all ingredients are combined and hot.

Using a griddle, heat up the tortillas. Fill tortillas with filling, lettuce, tomatoes, shredded cheese and salsa. Fold up ends and sides of tortillas to make a burrito.

This filling is also good for tacos and tostadas. If limiting carbs, serve filling in a bowl over lettuce with favorite toppings.
